ONE INGREDIENT CRACKERS

When they said desperate times call for desperate measures, I'm going to go ahead and assume that "they" was an allergy mom with a hangry child.

Desperate would have been a fairly accurate description last Wednesday when B was watching her brother snack on Goldfish crackers while eating her own bowl of roasted cauliflower mush. They indignation turned quickly into straight up anger as she loudly protested her desire for finger foods.


Enter the one ingredient cracker.


Thanks to her lovely allergy/colitis 1:2 PUNCH, Bugg currently only has 5 'safe' foods that aren't likely to cause a reaction. for obvious reasons this can make snack time difficult.

Luckily, a few months ago, we trial red lentils and they were a PASS.


Lentils are amazing little things. They are a tiny little legume, packed full of fiber, protein and iron, and they are my secret weapon.

To date I have turned them into cookies, and crackers, soups, purees and most recently: muffins!


So with a tantrumming toddler at my feet, I preheated the toaster oven, pulled some frozen lentil bars out of the freezer and we were off to the races. 20 minutes later the hangry one was happily munching on her crackers and the world was right again.



One Ingredient Crackers


Ingredient

+ 1 Cup Red Lentils

+ 2 Cups Water


Directions


1. Rinse lentils and add to medium pot with water. Bring to a boil, reduce heat, cover and simmer for 15 minutes.


2. Remove from heat and cool.


3. Line a baking sheet with parchment paper. Spread lentils evenly on tray. Score gently with a knife.


4. Freeze for 2 hours. Remove from freezer and cut along scored lines.


5. Preheat oven to 400'F. Place lentil squares 1/2 inch apart on a parchment lined baking sheet.


6. Bake for 15 - 20 minutes, until golden brown and enjoy!


Store them in an air tight container in your fridge for up to 5 days!
